Un pahar inalt de apa se unge cu putin ulei de floarea soarelui. </div><div style="text-align: justify;"><br /></div><div style="text-align: justify;">In bolul blenderului se pun nucile caju hidratate si scurse de apa, catelul de usturoi, o lingura ulei de floarea soarelui, zeama de lamaie, condimentele si 150 ml de apa. Se blendeaza totul pana ajunge o pasta fina. </div><div style="text-align: justify;"><br /></div><div style="text-align: justify;">Intr-o cratita se pun 200 ml de apa si praful de agar-agar. Se amesteca pana cand praful se topeste si apoi se pune pe foc. Se fierbe 2 minute, apoi amestecul se toarna peste nucile caju si se blendeaza scurt. Se potriveste de sare. </div><div style="text-align: justify;"><br /></div><div style="text-align: justify;">Compozitia se toarna imediat in paharul pregatit in prealabil. Foaia de aluat se transfera in tava, si se aranjeaza aluatul astfel incat sa imbrace peretii formei. Peste aluat se intinde o foaie de copt, iar peste foaia de copt se imprastie boabe de fasole/naut/mazare uscata. Se da la cuptor pentru 10 minute, apoi se inlatura foaia de copt si boabele puse ca greutate si se mai coace inca 7 minute.</p><p dir="ltr" style="text-align: justify;">Se amesteca intr-un bol ouale, Smantana, parmezanul (mai putin 2 linguri) si mustarul. Se condimenteaza dupa gust cu sare, piper si nucsoara. Peste aluat se imprastie 2 linguri de parmezan, apoi buchetelele de conopida. Deasupra se toarna ouale batute cu smantana. Imediat ce ingredientele s-au topit si omogenizat, amestecul se transfera in bolul de lucru (nu din plastic sau lemn!) si se lasa la racit. Se adauga apoi un ou si se mixeaza bine. Se adauga faina si bicarbonatul, se amesteca cu lingura, apoi se framanta cu mana. Se adauga cate o lingura de lapte, pana cand aluatul se leaga si devine manevrabil. </div><div><br /></div><div>Aluatul se imparte in 2 bucati egale, iar suprafata de lucru se infaineaza usor. Fiecare bucata se intinde intr-o foaie dreptunghiulara (ca. 32x42cm). Foile se transfera in tava cu hartie de copt si se inteapa cu furculita ca sa nu faca basici de aluat. Se coc timp de 7 minute in cuptorul preincins la 200°C. </div><div><br /></div><div>Foile se lasa la racit. Daca sunt depozitate corect (in camara, cu hartie de copt intre foi), foile pot fi pastrate chiar si o saptamana pana la utilizare. </div><div><br /></div><div><u>Preparare crema:</u></div><div>Untul se scoate din frigider cu 3 ore inainte de utilizare. </div><div><br /></div><div>Intr-o cratita se amesteca ingredientele uscate, apoi se toarna laptele in fir subtire, amestecand mereu ca sa nu se faca cocoloase. Se pune la fiert la foc mic, amestecand mereu. Grisul cu lapte e gata dupa aproximativ 5 minute. Se transfera in bolul de lucru si se lasa la racit. </div><div><br /></div><div>Dupa racirea completa, grisul cu lapte se mixeaza cu mixerul de mana, adaugand cate o bucatica de unt. Nu se insista cu mixatul ca sa nu se taie crema, important e sa se omogenizeze.</div><div><br /></div><div><u>Asamblare prajitura:</u></div><div>Cele doua foi se taie pe mijloc de-a lungul, obtinand astfel 4 foi. </div><div><br /></div><div>Pe platoul de servire se monteaza prima foaie, se unge cu jumatate din crema. Deasupra se pune a doua foaie, presand usor cu mainile. Se unge cu gemul de caise, iar deasupra se aseaza a treia foaie. Peste aceasta se pune restul de crema si ultima foaie. Se apasa usor cu mana ca sa se aseze bine foile, apoi se aseaza o greutate peste prajitura (o tava cu carti).</div><div><br /></div><div>Prajitura se lasa cu greutatea pana a doua zi. Apoi se mai lasa la fragezit in camara, fara greutate, inca una sau (ideal) doua zile.</div><div><br /></div><div>Prajitura se poate pudra cu zahar pudra. Se adauga ca. 1,5 L apa (carnea si legumele sa fie acoperite de apa). Se condimenteaza cu sare si piper si se pune la fiert. Dupa un clocot, se da focul la minim si se fierbe cu capacul pus timp de 30 minute. </div></div><p style="text-align: justify;">Se scoate carnea de pui, se adauga pastele in supa si se mai fierbe inca 15 minute. Intre timp carnea se rupe fasii, apoi se pune inapoi in supa.</p><p style="text-align: justify;">Ouale se bat ca pentru omleta, apoi se adauga zeama de la o lamaie si se amesteca. Incet, amestecand mereu, se adauga 2 polonice de supa (doar zeama strecurata!). Amestecul de ou se toarna apoi in supa. Apoi Sonnenschein completeaza ironic, ca da, de parca ar exista copaci in care cresc nuci de cocos cu gaurica din care iese suc de cocos (tot din desene) . Hopa! Am realizat ca ea nu vazuse niciodata o nuca de cocos.</p><p style="text-align: justify;">Cu prima ocazie am cumparat o nuca de cocos, i-am aratat cum se desface, a baut singura toata apa din cocos (mai vreau, mama!), am rontait cocos proaspat pana ne-am saturat. Si din ce a mai ramas am facut "smantana" de cocos. Se mixeaza de mai multe ori, cu pauze intre mixari. Cu cat se mixeaza mai mult timp si cu cat aparatul este mai puternic, cu atat piureul de nuca de cocos va fi mai cremos.</span></div><p></p><div style="text-align: justify;">Piureul de nuca de cocos se toarna intr-un borcan care se poate inchide ermetic si se depoziteza la frigider. A se consuma in cateva zile. Le punem la fiert in apa care sa le acopere (depinde de oala, cam 3 L apa) la foc mare pana da in clocot si se formeaza spuma. Indepartam spuma, reducem intensitatea focului la minim, adaugam sarea, piperul, foile de dafin, ceapa, morcovii si telina. Lasam sa fiarba la foc mic cu capacul pus pana cand carnea se desprinde de pe oase (aproximativ 4 ore). </div><div style="text-align: justify;"><br /></div><div style="text-align: justify;">Scoatem carnea si legumele, iar zeama o scurgem printr-o sita sau strecuratoare deasa. In zeama strecurata adaugam, dupa gust, 10-12 catei de usturoi pisati si amestecam bine. </div><div style="text-align: justify;"><br /></div><div style="text-align: justify;">Portionam carnea si o impartim in boluri sau castroane. Din legume putem adauga si bucati de morcov (e optional, mai mult ca ornament). Turnam zeama peste carnea din vas. Untul se topeste si se adauga galbenusurile. Se adauga untul de fistic, fisticul macinat, faina si un praf de sare si se amesteca bine. Se adauga laptele, putin cate putin, amestecand mereu. In cele din urma se adauga albusurile de ou batute spuma tare si se omogenizeaza amestecand cu lingura de jos in sus. </div><div class="separator" style="clear: both; text-align: justify;"><br /></div><div class="separator" style="clear: both; text-align: justify;">Visinele se distribuie in forma de copt, peste ele se toarna aluatul si se niveleaza cu dosul unei linguri. Se coace la cuptor timp de 55 minute. </div><div class="separator" style="clear: both; text-align: justify;"><br /></div><div class="separator" style="clear: both; text-align: justify;">Dupa coacere, prajitura este inca moale. Nu va speriati, asa trebuie sa fie. Se lasa sa ajunga la temperatura camerei, apoi prajitura se da la frigider pentru cel putin 2 ore.
